Ingredients
- 200 gms (7 oz) Bean thread or dried thin rice noodles
- 3 Cooked chicken breast fillets (Shredded)
- 1 cup Shredded mint leaves
- 100 gms (3 ½ oz) Beansprouts or snowpea mange tout) sprouts
- 3 tablespoons Sesame seeds dressing
- 3 tablespoons Fish sauces
- 2 tablespoons Sugar
- 3 tablespoons Lime juice
- 1 Mild chilli (Seeded and chopped)
Instructions
- Place the bean thread noodles in a bowl and cover with boiling water. Allow to stand for 5 minutes, then drain.
- Toss the chicken with the noodles, mint, beansprouts and sesame seeds.
- To make the dressing, combine the fish sauce, sugar, lime juice and chilli.
- Pour the dressing over the salad and chill until ready to serve.
- If using rice noodles, cook in boiling water until al dente, then drain.
